Apple Butter Muffins
- 1-3/4 cups all-purpose flour
- 1/3 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1/4 tsp. ground nutmeg
- 1/8 tsp. ground allspice
- 1/8 tsp. ground ginger
- 1 egg, lightly beaten
- 3/4 cup milk
- 1/4 cup canola oil
- 1 cup thick Country Store Apple Butter (divided)
TOPPING:
- 1/2 cup chopped pecans or walnuts
- 3 Tbsp. sugar
In a small bowl, combine the first eight ingredients. Combine egg, milk, oil and 1/2 cup Apple Butter. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups with a rounded Tablespoon of batter. Top each with a rounded Tablespoon of remaining Apple Butter and then remaining batter. Combine topping ingredients; sprinkle over muffins.
Bake at 400 degrees F. for 15-18 minutes. Cool 10 minutes before removing from muffin pan.

ReplyDeleteI am super excited to try these! I have some homemade apple butter that I didn't use up last year and I think that it would be a good thing to do with it!!! Fall is here and so are the apple recipes... bring on the pumpkin :)
ReplyDeleteI love these they looks so yummy, they will go with a nice cup of hot tea! I will be making these! Just tweaking it with whole wheat flour and some other ingredients! Thanks again!
